Mmmmmmm APPLE PIE OVERNIGHT OATMEAL.. YUMMYYY Hi, my name is Joy and I love food. I really do. I mean if I had to pick between food and shoes I'd probably pick......wait ummm.... scratch that. If I had to pick between food and shoes I would make the two fight it out to the death, then I would pick the winner. I personally can't make that choice. It’s like trying to choose between your children. It’s not possible. With that said I thought I would bring you all into my world of eating and cooking. This is just a little something something I will be including into my weekly posts. So for the first post I give you a Saturday morning/afternoon family brunch idea, apple pie oatmeal. I love a good oatmeal. It’s filling, delicious and a great way to start your day. Now my favorite part about the overnight oatmeal is that you can prepare it the night before. Then in the morning all you have to do it serve and eat. Who doesn’t love that?
Caution: This is not a recipe you want to have everyday if you are trying to lose weight. This is a Saturday brunch idea. Brunches are not meant for calorie counting. They are meant for delicious happiness.
Oatmeal recipe
Ingredients
3/4 cup Plain yogurt
1/4 cup Milk (I personally prefer skim milk, which to me is just a fancy way of saying water-down milk)
1 tsp Pure honey. (If you like it sweet you can add another ½ tsp of honey )
1/2 tsp Vanilla essence (vanilla essence tends to be a bit weak so put as much as you like. I usually just eyeball it)
1/4 tsp Ground cinnamon
3/4 cup Oat meal flakes
Directions
In a bowl first whisk together the wet ingredients (yogurt, milk, maple syrup, vanilla and cinnamon). Once the liquids are perfectly mixed together you add the oats. Stir well, then place in overnight container, seal and place in the refrigerator over night.
Apple pie filling
Ingredients
5 Apples: Peeled, cored and sliced thinly
1 tsp Cinnamon
1/2 cup Brown sugar
2 tsp Lemon juice.
1 dash Nutmeg
1 dash Salt ( optional )
Directions
Preheat oven to 375°F.
Place all the sliced apples into a missing bowl and gently miss all the ingredients together.
Once its all mixed, place the apples in a non-stick pan.
Cover the pan with foil and place in the over and let it back for about 20-30 minutes.
Be sure to stirring at least once every 10-15 minutes.
Once they are soft, cook for another few minutes to thicken the cinnamon sauce.
Once it is finished baking, let the apple cool before placing into the refrigerator.
The next morning it will be ready to server.
Place the amount of oatmeal you want to have for breakfast into a bowl then top with the amount of apple pie filling. If it is straight out of the fridge it will be chilled.
If you want it warmer, you can mix the amount of oatmeal and apples you want into a bowl and place into a microwave for about a minute.
