It’s finally here. My “Ain’t nobody got time for that” Lasagna recipe. Why that name? It’s simple, I’m just a lazy foodie. I like cooking and I love eating but most importantly, I hate anything that takes to long to cook or is too complicated.
So just as a quick heads up, I alter recipes to fit my schedule and laziness lol.

All the ingredients you will need.
Lets start with the meat sauce.
In a large pot start by sautéing 2 onions and 2 pinches of salt. Cook until the onions “sweat” down.
Next, throw in your 1 kg of minced meat and cook it down. Do not add any salt or seasoning as the meat cooks. You will cook the meat until it is brown and all the water has evaporated.
Once the minced meat is completely cooked, you will add your spices. First start with the salt. I’m not a fan of telling people how much salt to add in their food cause every person’s taste varies. So, you add as much salt or as little salt as you like.
Next, add all the spices. Pour in the 3 tablespoons of Oregano, 3 tablespoons of mixed herbs and mix into the meat well. Next, pour in the 1-teaspoon of black pepper, ¾ teaspoon of cinnamon, ¾teaspoon of chili powder and mix well into the minced meat. Once everything is mixed in well you can taste and see if there is any other spice you would like to add or any spice you need more of.
Lastly add all four 340g jars of pasta sauce. Any type of pasta sauce can work. I used 4 jars of Tomato & Basil pasta sauce. Stir the sauce in well and let it simmer over the fire for 5 minutes. Turn off the fire and move on to the cream of spinach.
Now for the cream of spinach.
In a pot start by melting 2 teaspoon of butter. Once the butter is melted add 1 chopped onion and 3 cloves of crushed garlic. Let the onions and garlic “sweat” down.
Next throw in your 5 bunches of chopped spinach into the pot, salt and make sure to pour in ½ of water to help cook down the spinach. Once the spinach has wilted and cooked down, stir the spinach to make sure the onion, salt and garlic has spread out well.
Now, in a bowl mix 1/3 cup of all purpose flour and ¾ cup of milk. Mix until all the lumps disappear. Next pour in the milk and flour mixture into the spinach mixture and stir until the spinach gets creamy. Taste and add any more salt if needed.
Preheat your oven at 190 degrees C.
Assembly time
First thing you want to do is shred your 500g of mozzarella cheese and place it on the side.
Spread a small amount of meat sauce in the bottom of a glass or ceramic baking dish. Arrange 3 noodles of precooked lasagna pasta sheets lengthwise over meat sauce.
Next spread the cream of spinach mixture. Then arrange 3 noodles lengthwise over the spinach.
Spread the meat sauce mixture over the lasagna noodles. Take your shredded mozzarella cheese and spread it evenly over the meat sauce. Arrange 3 noodles lengthwise over meat sauce and cheese
Again spread the cream of spinach mixture. Then arrange 3 noodles lengthwise over the spinach.
Lastly spread the meat sauce mixture over the lasagna noodles. Take your shredded mozzarella cheese and spread it evenly over the meat sauce. Because it is the top layer, don’t be shy to spread a large amount of the cheese. That’s hot you get it nice and gooey.
Place the lasagna in the oven and cook until the cheese melted. And because the pasta noodle are already precooked the cooking time should only take any where between 7-15 minutes.
And that’s it. You are down. Yummy gooey cheesy lasagna. Simple, delicious and like I said, lasagna for those who ain’t got time for that complicated mess.

  1. I love seeing how your blog has grown over time, Joy. 🙂 and I also love that the name of this recipe is “‘ain’t nobody got time for that’ lasagna” because gahh too real. I once tried to do one of Miss Mandii’s recipes during her #100days challenge and afterwards was like damnn how’s she doing this for 100 days. So yay to quick recipes that accommodate ‘busy’ness aka laziness.
